Insta Pot Pork Loin

If you’ve never cooked a pork roast recipe in an Instant Pot or pressure cooker before, you’re in for a treat.

 The pork is super juicy, tender and flavorful. 

There are so many great features in cooking with our Instant Pot pressure cooker but two features really stand out in this pork roast recipe.

 First of all, I can sear the pork on the Saute function in the Instant pot. This really helps make the pork loin roast extra juicy by sealing in the flavor and juices.

 Secondly, we absolutely love how quick it is to cook this pork roast! Depending on the size of the pork, I used about 2 pounds, the pork cooked in less than 20 minutes. Anywhere from 15-20 minutes will result in a delicious and juicy pork roast. 

I added vegetables as well and the carrots and celery cooked perfectly. With the great “saute” feature, we were able to heat up the sauce again and make a quick and easy gravy for the pork roast.

 Overall, in less than 30 minutes we had an outstanding dinner that would have taken over three times as long in the conventional oven. And the delicious pork roast flavors were just as good in the Instant Pot as it was in the oven.

Pork loins can also vary in size and thickness. So cooking times will vary greatly, particularly if you bought the tenderloin, which cooks much faster. Cook the loin roast or pork tenderloin longer if it's large or thick. If you are unsure on how long to cook your particular roast, cook the pork loin until it reaches an internal temperature of 145°F in its thickest part. The higher the temperature, the drier the loin will be, so don't go past 145°F while in the oven too much if possible. You can use a slow cooker too and if it has a sear or saute function like the Instant Pot has, then even better!

Ingredients
  • 2 pounds pork loin roast
  • kosher salt or sea salt , to taste
  • fresh cracked black pepper , to taste
  • 2 Tablespoons butter
  • 1/2 medium onion , diced
  • 4 cloves garlic , minced
  • 2 medium carrots , chopped
  • 2 stalks celery , chopped
  • 1/2 cup broth or apple juice
  • 2 Tablespoons Worcestershire sauce
  • 1 Tablespoon brown sugar
  • 1 teaspoon yellow mustard
  • 2 teaspoons herbs of choice- dried or fresh (rosemary, basil, oregano, thyme etc…)
  • 1 Tablespoon corn starch
  • 1/4 cup water
Directions
  1. Season pork with salt and pepper. Turn Instant Pot on "Sauté”, and add butter and melt. Add the pork loin and sear the sides of the pork loin to a nice golden brown.  Add the onions and garlic and cook until soft, about 2 minutes.
  2. Stir in the carrots, celery, broth or apple juice, Worcestershire sauce, brown sugar, mustard, and herbs.
  3. Close the lid, set to high pressure, and after the pressure cooker reaches full pressure,  cook for 15-30 minutes *depending on size & preferred doneness.  (These are the steps we did for our Instant Pot:  Press "Cancel" to stop the "Sauté" setting. Press the "Manual" button. Set the time to 15 minutes.)
  4. After the cooking time is complete, press "Cancel" and carefully release the pressure. If possible, check the internal temperature of the pork loin (it should be about 145°F).
  5. Remove the pork loin from the Instant Pot (keep the juices the Instant Pot), cover and allow the pork loin to rest for about 10 minutes, depending on how large your loin roast is and how well done you like it. 
  6. Mix together the cornstarch and water. Add to the Instant Pot with the juices. Turn Instant Pot on "Sauté” and simmer until thickened. Taste seasoning and add additional salt and pepper if desired.

So here are my Phase 1 RESULTS.... I lost 3.8 lbs and 9.25 inches! While you know I'd love to see the scale move more, I'm happy with my results. I feel stronger and I know I was and AM committed 100%!!! It seems like Phase 1 has flown by. I have to keep remembering what Autumn said and want to remind you, we all start at different phases and we all are unique so our results will be different. I am TRUSTING the process and excited to see what Phase 2 will bring. I'm also excited to be doing this program along with all of you!!! My inches were -1 from my chest, -3 from my waist, -3 from my hips, -1 and -1.25 from my thighs!!! I'm so PROUD of ALL OF US for completing Phase 1 and I'm still cheering those of you that are still working on Phase 1!!! #wevegotthis #80dayobsessed

Q: Where can I find 80 Day Obsession?

A: The 80 Day Obsession program will be available exclusively on Beachbody On Demand. A: 80 Day Obsession launches on January 15, 2018. Q: Is it available internationally on Beachbody On Demand?

A: Yes! At this time, Beachbody On Demand is available in the US, Canada, and the United Kingdom.

Q: What equipment do I need for 80 Day Obsession?

A: You will need weights: light, medium, and heavy, depending on your fitness level. (Autumn and the cast use anywhere from five pounds up to 40-pound weights.) You’ll also need Beachbody Resistance Loops (available February 15 on TeamBeachbody.com)Beachbody Strength Slides, and Beachbody Portion-Control Containers for your eating plan. Optional equipment includes a Beachbody Foam Roller and the Beachbody Core Comfort Mat. You can purchase everything (except for the weights) from your Team Beachbody Coach in convenient, specially-priced 80 Day Obsession equipment packages or on TeamBeachbody.com.

Q: Do the strength slides work on carpet?

A: Yes, the Beachbody Strength Slides work on carpet and hard floors. They come with removable booties so they’ll slide on a variety of surfaces. If you work out on carpet, don’t use the booties. If you work out on a hard floor like tile or wood, put the booties on so you can slide more easily. And if you work out on a rubber floor, you may need to put down a towel or blanket and use the slides without the booties.

Q: My resistance loops are different than the ones Autumn and the cast use in the workouts. What do the colors mean?

A: The three resistance levels that Autumn and the cast use are:
Yellow = Light
Green = Medium
Blue = Heavy
NOTE: The Beachbody Resistance Loops are different from the Strength Bands used in Brazil Butt Lift. The loops used in 80 Day Obsession have more resistance.

Q: How should I care for my resistance loops?

A: To ensure the longest life, you should store your resistance loops in a cool, dry place out of the sun. Before each workout, check your loops for nicks or tears. If you see any, throw that loop away and get a new one. You can purchase replacement loops as a stand-alone item from your Team Beachbody Coach or on TeamBeachbody.com.

Q: How many workouts are there? How long are each of the workouts?

A: There are 80 unique workouts in three phases, and each workout has a particular focus — Booty, Total Body Core, AAA, Legs, Cardio Core, and Cardio Flow. The moves may repeat in a phase, but Autumn changes the sets and rep patterns week by week so you keep making progress. And in each new phase the workouts are totally different, with brand-new moves to challenge you all over again. And since the workouts are filmed live, it’s never the same experience twice — it’s like having Autumn as your personal trainer every day!
The 80 Day Obsession workouts are 30-60 minutes in length, with most averaging 45-60 minutes. You’ll work out six days a week, with one rest day (Sunday). Because of this schedule, the 80 workouts are spread over 13 weeks. Rest days are not counted as part of the 80 days.

Q: Can beginners do 80 Day Obsession? What intensity level is it?

A: 80 Day Obsession is best for intermediate to advanced fitness levels. It’s not a beginner workout, so you should already have a base of fitness before attempting this program. If you’re not sure whether you’re ready for this challenge, don’t worry! You can start with several rounds of A Little Obsessed, Autumn’s five-day introductory program that launches on December 20, 2017. A Little Obsessed has shorter, 30-minute workouts featuring some of the moves and equipment from 80 Day Obsession. You can also begin with Autumn’s other beginner-level programs, like 21 Day Fix or Country Heat, and work your way up to 80 Day Obsession.

Q: Is there a modifier in the workouts?

A: Yes, there is a modifier in every workout. She will demonstrate a slightly less intense version of some moves, but she doesn’t lower the intensity to a beginner level.

Q: What is a 80 Day Obsession eating plan like?

A: The 80 Day Obsession eating plans are based on the concept of timed-nutrition. This is how Autumn eats, and what she recommends for her personal training clients. Timed-nutrition is simply eating the right foods (especially protein and carbs) at the right times to help fuel your workouts, build muscle, and recover from workouts while keeping your metabolism and energy levels high. Over the course of the day, our bodies fluctuate between breaking down muscle and building it back up. Timing your nutrition can help ensure your muscles have the protein they need during those building-up phases. That’s why it’s essential to follow the timed-nutrition plan to get your best results with 80 Day Obsession.

Q: Are there vegan eating plans?

Q: Can someone with bad knees do 80 Day Obsession? Is this a high-impact program?

A: If you have injuries or knee problems, you should consult your physician before engaging in any exercise program. Some of the workouts have high-impact moves, but you can follow the modifier for a lower-impact alternative.

Q: I’m concerned about how to fit timed-nutrition into my job or lifestyle. What if I can’t eat at certain times, or if I work out very early in the morning and I’m not used to eating first?

A: Following Timed-Nutrition is the best way to get results, because you need this fuel for energy, muscle-building, and recovery. We’ve designed the program to accommodate workouts at almost any time of day. Your eating plan will show you what and when to eat in your workout block, which is a 4- to 5-hour window surrounding your workout. You can move your workout block meals around to fit your schedule (we give you examples so you can see exactly how it works).
We understand that sometimes life gets in the way and you can’t follow the program exactly. We recommend following the program as Autumn designed it and eating before your 80 Day Obsession workout — and we provided a few pre-workout meal options — but if you just don’t have the time, that’s OK. Q: Can I do this program if I’m pregnant or breastfeeding?

A: We do not recommend the 80 Day Obsession program if you’re pregnant. If you’re breastfeeding, you should consult your physician before engaging in any nutrition or exercise program. Once your doctor has approved, calculate your Calorie Target using your Maintenance Calories (without subtracting the Calorie Deficit) if you are trying to lose weight — a sufficient calorie deficit will automatically be created by the energy it takes to breastfeed your baby. If you’re trying to maintain weight, find your plan using your your Maintenance Calories, then bump up one plan from there

Q: Can I do this program if I’m diabetic?

A: We recommend that you consult your physician before engaging in any nutrition or exercise program if you’re diabetic.

Q: Do I have to start 80 Day Obsession on a Monday, or can I start it any day of the week?

A: You can start this program any day of the week as long as you follow the workout calendar.

Q: How does A Little Obsessed work with 80 Day Obsession?

A: Think of A Little Obsessed as your crash course to get ready for 80 Day Obsession. It’s a five-day introduction to the moves, equipment, and nutrition you’ll get in the full program. A Little Obsessed workouts are shorter, about 30 minutes compared to the 45- to 60-minute workouts (on average) in 80 Day Obsession. And some of the moves are slightly easier. We recommend that everyone do several rounds of A Little Obsessed to work their way up to the more challenging 80 Day Obsession workouts. The A Little Obsessed eating plans are also a great way to introduce yourself to the concept of timed-nutrition.

Q: When will A Little Obsessed be available permanently on Beachbody On Demand?
