21 Day Fix Meal/Snack Ideas


Check out some of my favorite 21 day fix meal and snack ideas. Pinterest has a ton of ideas. Share your favorite recipes, I love trying new things! 


21 Day Fix -Breakfast Scramble
Breakfast:
Fill one container with a mixture of chopped veggies. I used onions and red peppers, along with about a teaspoon of minced garlic. Saute in olive oil until softened, about 3 minutes. Add two eggs and scramble. I seasoned with pepper, sea salt, and Italian seasoning.  I also LOVE the free food list on 21 Day Fix.  Add as much garlic and hot sauce as you want!
1 Green, 1 Red 

Another Favorite-got this idea from Autumn-Oatmeal with 1 tsp of peanut butter, 2 strawberries sliced and a sprinkle of cinnamon
1 Yellow, 1 tsp, 1/2 Purple

Snacks:
Hummus and carrots/peppers.

1 Green, 1 Blue 
21 Day Fix SNACK idea.  Greek yogurt,  almonds and cinnamon. YUM.
1 Red, 1 Blue 


Ezekiel Toast-1 piece of ezekiel toast, 1 banana (I usually use 1/2) and peanut butter.
1 Yellow, 1 Purple, 2 Tsp. 

Ezekiel Toast-1 piece of ezekiel toast, 1/4 avocado, 1 boiled egg sliced, salt and pepper to taste

1 Yellow, 1 Blue, 1 Red

Lunch: 
Taco Salad-Super easy Taco Salad. 1 cup of spinach/lettuce, 1 cup of ground turkey with taco seasoning (you can make your own, or sometimes I buy the low sodium) and 1 container of avocado and grated cheese.
1 Green, 1 Red, 1 Blue 


Dinner: Hearty Beef Stew-this is one of my favorites and and my family loves it too. I add red potatoes and carrots for them.

My FAVORITE Shakeology Recipes

I wanted to share with you my favorite shakeology recipes. I do have an ALL TIME FAVORITE -Chocolate Vegan, although I do like to change it up with other flavors. Each of my family members have their favorites too! David and Jordan like regular chocolate, Jade likes vegan chocoloate, and Jolie and my mom like strawberry.

Let's start with Vanilla! Vanilla is probably the most versatile flavor-you can change it up the most! Here is my favorite recipe-Snickerdoodle! I absolutely love cinnamon and with the combination of ingredients it's AMAZING!


Next we have Chocolate-this was my favorite first! I like to freeze my banana, and now I only add a splash of almond milk! This one is super good.

Strawberry is new as of last year and it's super good. I love the almond flavoring in the strawberry.Sometimes I just add fresh berries-blueberries, starwberries and rasberries. 

Greenberry is next! This one people are hesitant to try but it is so good! Greenberry and Mango-Pineapple!  whoa! So good!!!  Mango Tango!

We have two vegan flavors! Tropical Strawberry and Chocolate Vegan.

Tropical Strawberry is my go to when I can only mix it with water and not blend with other ingredients.
So I saved the best for last. Chocolate Vegan Shakeology. Love adding the walnuts to this mix. Sometimes I also make a mocha coffee one-it's super yummy too! I have some of my favorites for you here. We also have calendars if you need more ideas. Send me a message and I can send a copy your way. 
The best of part of drinking shakeology is the way it makes me feel, and that I know it provides all my nutrition in one cup. I believe in it so much that my entire family is drinking it. I have heard well isn't that expensive, the way I look at it we can't afford not to drink it. I want my family to be in the best health and by drinking a shake each day, replacing one meal I know they are getting their daily dose of dense nutrition. Other added benefits, it makes you feel great, gives you energy, helps with cravings, keeps you satisfied, and helps with your skin/hair. Not to mention we haven't been to the doctor in awhile. So the way I see it, it's saving us money! I think everyone should be drinking it and reaping the rewards. 

Pork Carnitas-21DFX Approved!

So I tried a new recipe this week, and it was approved by the family! Score!!!

I'm always on the look out for new recipes, and this one caught my attention. I am constantly scouring Pinterest and blogs for clean eating recipes. I loved making this recipe because it was so easy and I got to use my Crock Pot.

Pork Carnitas


Ingredients:

·                3 lbs of Pork Loin
·                1 bay leaf
·                1 1/2 cup of water


Mix to rub on roast:
·                2 tbsp of chili powder
·                2 tsp of cumin
·                1 tsp of ground coriander
·                1/2 tsp cloves
·                1 tsp onion powder
·                1 tsp garlic powder
·                1 tsp sea salt
·                1 tsp oregano


Directions:

Mix all spices together except the bay leaf in a bowl.
Rub down the entire pork loin with the spices and place in your slow cooker.
Add the bay leaf and water and cook on low for 6-8 hours.  Keep an eye on the pork just to make sure the water doesn't absorb and it dries out.  If you have to add more liquid please do.
Your pork should pull apart easily so you can shred it.

Once your pork is ready, it is able to be shredded take it from the crock pot, shred and then place back into the crock pot.  Stir the meat to coat with the juices.

You can fill a red container with this for the 21 day fix!

For the Carnitas you will need:
·                Corn Tortillas
·                Black or Pinto Beans in a can
·                Romain Lettuce
·                Diced Tomatoes
·                Diced Avocado
·                Shredded cheddar cheese


Cilantro Lime Topping (This stuff is AMAZING!)
·                Greek yogurt
·                1/4 Cup Fresh Lime Juice
·                1/4 Cup Fresh Cilantro Chopped
·                1 lime cut into wedges for garnish



Combine these ingredients in a bowl for the dressing and set aside.

Add the drained beans with 1/2 of a cup of water to a pot on the stove over medium heat. Cook until heated through.  Gently mash with a fork until they reach your desired consistency.

Lightly spray your corn tortillas with cooking spray and place on a foil lined baking sheet.
Crisp in the oven on 350 degrees for 8-10 minutes until desired crispiness.

Next step is to assemble:


So take your corn tortilla and add your fixings to make yourself a pretty sweet Carnita.
Add a dab of the dressing on top and enjoy!

Measure out a red, a yellow, a green and a blue for this recipe!
Your beans and tortilla=yellow.
Your cheese= blue
Tomatoes and lettuce= green
Pork=red.

Insanity Max 30

Do you have exercise ADD? Do you like to change it up and add variety to your workouts?

This explains me to a T! I'm currently using Chalene Extreme- and I'm loving this workout. But I found I was missing my cardio, although Chalene Extreme has some, it's mostly focused on lifting weights and building muscle. I know some people use a hybrid workout, meaning they use two programs and do one workout each day. I tend do better if I do two programs and do two workouts each day. Plus this allows me to get my early workout completed to jump start my day, and then do the cardio workout with my husband later that evening. We have completed Insanity Max 30 one time, but I'm ready to start again!!!

I've been using 21 day fix extreme, and have completed many rounds so my ADD is kicking in and it's time to change it up. Thanks to everyone who responded to my question I posted, I was trying to determine whether to do Gamma or Insanity Max 30 next. I've missed Shaun T!!!

So Insanity Max 30 it is! David and I will be starting the program on Monday. I've been doing some meal planning this weekend. I love that this program uses the colored containers for meal prep.
That will be an easy transition for me, moving to this program.
