Chicken and Bean Burrito Bowl

Make your own Mexican-inspired chicken burrito bowl with cilantro-lime rice and all the trimmings. This recipe uses black beans, but you can substitute pinto beans if you prefer. With fresh salsa, a squeeze of lime, and creamy Greek yogurt on top of crisp romaine lettuce, no other dressing is needed. It was delicious. I also added a little steak to David's bowl. Definitely will be making this recipe again.

Prep Time: 20 min.
Cooking Time: None
Yield: 4 servings
Ingredients:
2 cups cooked brown rice, warm
1 Tbsp. fresh lime juice
2 Tbsp. finely chopped fresh cilantro
3 cups chopped romaine lettuce
1 cup cooked black beans, warm
1½ cups shredded cooked chicken breast, warm
½ cup shredded Monterey jack cheese
1 cup fresh tomato salsa
½ medium avocado, sliced
4 Tbsp. low-fat plain yogurt
Preparation:
1. Combine rice, lime juice, and cilantro in a medium bowl; mix well.
2. Evenly divide lettuce between 4 serving bowls.
3. Top evenly with rice mixture, beans, chicken, cheese, salsa, and avocado.
4. Top each bowl with 1 Tbsp. of yogurt; serve immediately.

CHANGE! Are you good with it? Do you find it just creates a few ripples? Or...Does it turn your world upside down?
I think back to a CHANGE that turned things upside down for me. In 2011, I left the Elementary classroom and started teaching online. It was a tough decision but one I felt I needed to make at the time for me and my family. I'd always been intrigued with virtual learning, however it was super hard emotionally for me to leave a school, and colleagues( work family) I had grown to love.
But soon it didn't take long for me to be right at home with my new virtual teaching. It was during this time that my first transformation with Beachbody happened. I'd always made an excuse not to workout - which usually meant not enough to time, but in reality meant I really didn't want to. So I started the program Insanity and throughout my first year of teaching online from home I lost 40 lbs. I was so excited and never felt better.
Over the next year is when another CHANGE happened probably one that would have the biggest impact on me! We decided to move from Cedar Key to Gainesville, with my new job I could work from home and David had been driving back and forth to Gainesville for over 20 years, and he needed a CHANGE. While I knew it was the right move for my family, I was still having a difficult time because this was the place I grew up, my kids had grew up and pretty much all I had known. We made the move and shortly after that I took a new position.
You see I'm the kind of person that needs to stay busy and challenged, especially when I'm worried or upset about something. The new job was good and I loved learning, But still seemed to be missing something for me, a few months passed on and I was introduced to Beachbody coaching. I knew it was something that would help me stay focused on my own health and fitness, while also helping others, so I was all in. And That's just what it's did- the coaching opportunity has helped me fill a void and helped me get stronger. Today I still miss living in Cedar Key but I hope to one day be back. (And I can visit often).
I'm content now and feel happy, helping others as they go through CHANGEs in their lives.

Great Recipes from this Week!

Nothing satisfies you on a chilly day like a hearty homemade soup. This veggie-packed recipe makes enough for several meals and freezes well.
Total Time: 43 min.
Prep Time: 15 min.
Cooking Time: 28 min.
Yield: 8 servings, about 1½ cups each
Ingredients:
1 Tbsp. olive oil
1 medium onion, chopped
2 medium carrots, sliced
2 cloves garlic, chopped
1 cup white corn kernels
1 (14.5 oz) can diced tomatoes, no salt added
3 cups low-sodium organic vegetable broth
1 tsp. dried ground thyme
2 bay leaves
1 cup broccoli florets (or cauliflower florets)
2 medium red or white potatoes, cut into ¾-inch cubes
1 medium yellow squash, cut into ¾-inch cubes
1 cup medium zucchini, cut into ¾-inch cubes
Preparation:
1. Heat oil in large stockpot over medium-high heat.
2. Add onion and carrots; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.
3. Add garlic; cook, stirring frequently, for 1 minute.
4. Add corn, tomatoes, broth, thyme, and bay leaves. Bring to a boil. Reduce heat to medium-low; cook, stirring occasionally, for 10 minutes.
5. Add broccoli and potatoes; cook, stirring occasionally, for 5 to 6 minutes.
6. Add squash and zucchini; cook, stirring occasionally, for 5 to 6 minutes.

Serving: 1 1/2 Green, 1 Yellow

21 Day Fix - Hearty Beef and Butternut Squash Stew

Serves: 6 servings
Ingredients
  • 1 tsp olive oil
  • 1½ lbs raw lean beef stew meat, boneless, cut into cubes
  • 1 medium onion, chopped
  • ½ green bell pepper, chopped
  • ½ red bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes or 2 medium tomatoes, chopped
  • 1 cup organic beef broth
  • 1 bay leaf
  • 1 tsp sea salt
  • 1 tsp ground black pepper (optional)
  • 2 cups cubed butternut squash
  • ¼ cup chopped fresh flat leaf parsley
Instructions
  1. Heat oil in a large sauce pan over medium-high heat.
  2. Add beef; cook, stirring frequently, for 4 to 5 minutes, or until beef is brown.
  3. Add onion and bell peppers; cook, stirring frequently , for 4 to 5 minutes.
  4. Add garlic; cook, stirring frequently, for 1 minute
  5. Add tomatoes, broth, bay leaf, salt and pepper, bring to a boil.
  6. Reduce heat to medium-low, cook, covered, for 40 minutes.
  7. Add squash; cook, stirring occasionally, for 8 - 12 minutes, or until sauce has thickened and beef is fork-tender.
  8. Remove bay leaf; serve topped with parsley.
  9. Twenty One (21) Day Fix Extreme a serving = 1 green 1 red



Quinoa Black Bean Salad

Serves 12 (1 cup each) Prep Time: 30min. Cooking Time: 12 min. 
Container equivalents: 1 green, 2 yellow, 1.5 teaspoons 

INGREDIENTS

  • 1/3 cup Fresh lime juice
  • 1 Tbsp. ground cumin
  • 1 Tbsp. sea salt (or Himalayan salt)
  • 1/3 cup olive oil
  • 2 cans (15-oz. ea.) black beans drained, rinsed
  • 4 1/2 tsp. red wine vinegar (ground pepper to taste; optional)
  • 4 cups water
  • 2 cups dry quinoa, rinsed
  • 1 medium red bell pepper, finely chopped
  • 1 medium orange bell pepper, finely chopped
  • 1 medium yellow bell pepper, finely chopped
  • 1 (10-oz.) bag frozen corn, thawed
  • 1 bunch fresh cilantro, finely chopped
ingredients
  1. 20 oz 93% lean ground turkey
  2. 1 tsp sea salt
  3. 1 tsp dry mustard
  4. 1 tsp paprika
  5. 1 large egg
  6. 3/4 cup quick oats
  7. 2 cloves garlic, minced
  8. 1 T fresh parsley chopped
  9. 2 T tomato sauce, no sugar added
  10. 1 Large Spaghetti Squash
instructions
  1. Preheat oven to 400
  2. Cover a large pan with parchment paper, set aside.
  3. In large bowl, combine all ingredients by hand and mix well.
  4. Roll into 30 1-inch balls. Place on baking sheet.
  5. Bake for 15-20 minutes, until cooked through.
serving suggestions
  1. I serve this over spaghetti squash and seasoned stirfry veggies and top it with Feta cheese.

  1. 1 red, 1/2 yellow for 5 meatballs

I still can't believe that I got to register for this amazing success club trip for next year!!! David and I never really took a honeymoon and after 26 years I think it's time!!! What's even better, I can earn this trip-- making it FREE! Oh and did I mention this year I'm going on a cruise in the Caribbean!!! Pretty amazing, right?!?!

Meal Prep--The Key to Staying on Track!!

While it’s crucial to give it your all during the workouts, it’s equally important to eat right if you want to lose fat and tone up or build muscle. And like Autumn says, "Abs are made in the kitchen!" I find myself eating more frequently since starting the 21 day fix container plan, so it's so important for me to have foods prepared and ready to go. I find that my appetite has increased since starting Hammer and Chisel. 


I love the Container plan that comes with Hammer and Chisel. The recommended foods are divided into color-coded containers and the plan tells me how many of those containers to eat each day. Plan B allows me 4 green containers (veggies), 3 purple containers (fruits), 4 red containers (proteins), 3 yellow containers (carbs), 1 blue container (healthy fats), 1 orange container (nuts and seeds), and 4 teaspoons (oils and nut butters) each day. SO if I have food prepped and ready to go, it takes the guesswork out of it. NO EXCUSES not to stay on track.

Check out these Berry Quinoa Parfaits! They are perfect snacks!  And they’re great for meal prep because the only ingredient that needs to be cooked is the quinoa. Once the quinoa was completely cool, I just layered quinoa, yogurt, and fruit. The recipe called for strawberries, but to save the work of hulling and slicing strawberries, I sped up my meal prep by substituting an extra container of blueberries. This is a really hearty snack that kept me feeling full throughout the morning. It's 1 purple, 1 red, and 1 yellow and super filling.

For lunches, I chose to make salads. That's simple to me and I can pair that with a homemade dressing and fruit and I'm set. I usually use 2 green, 1 red, 1 orange, and 1 purple for my lunches. 
I also like to prepare veggies and meat to have on hand. I will add a healthy recipe in the crockpot for the family as well.


Here is a favorite for a dinner dish! Riced Cauliflower-and the entire family LOVES it!

 So you see it doesn't have to be complicated to meal prep, just make some of your favorite foods and you are good to go! Check back later this week for some of my new favorite recipes from the Hammer & Chisel nutrition guide.
